What do you need to make Sorshe Kumro


500 gm Pumpkin (cut into cubical shape)
1 tbsp Mustard Seeds
1 Bay leaf
1/2 tsp Kalo jeere(Nigella seeds)
1/2 tsp ginger paste
1/2 tsp jeera powder
1/2 tsp corriander powder
1/2 tsp turmeric powder
2 green Chilies slit
salt to taste
Pinch of sugar

How to make Sorshe Kumro

Take little oil in a pan and add the bayleaf & Nigella seeds. Let them spluter.
Add the pumpkin pieces, fry them with salt & turmeric powder.
Fry the pumpkin pieces carefully as they are soft in nature.
By the time make a paste with the musturd seeds & green chillis. If you want it less spicy you can keep the green chillis in the curry without making them paste.
As they turn golden brown, add the spices & stir for few minutes.
Now add the musturd paste & mix them well. Do not cook more than 1-2 min after adding the musturd paste as this may taste bitter. So it’s better to add the musturd paste just before adding the water.
Add little water as it will be a dry curry.
Adjust salt & sugar.
Spread chopped corriander leaves & cook for a minute.

It’s yummy with steamed rice.
