Medu Vada Recipe

Medu vada is a popular south Indian recipe. Its mostly prefer to have in a break fast menu. There are many types of vadas prepared in South India, among them Medu Vada is very crisp in nature. A superb combo with coconut chutney and sambar.

Ingredients :

  • 2 cup Urad daal (Split black gram)
  • 1 tsp ginger paste(You can take crushed ginger also)
  • Water as required for grinding
  • 2 green chilies finely chopped
  • Pinch of black paper
  • Pinch of hing or asafoetida
  • 5-10 curry leaves (kadi patta)
  • Oil for deep frying
How to make :
  1. Wash urad daal properly and soak in clear water for 5-6 hours.
  2. Then drain water and grind in a blender slowly.
  3. Add water whenevr required and make a thick paste.
  4. Check in between and when the batter become smooth remove from blender and put in a bowl.
  5. Now add Salt, Ginger, Green Chilies, Black Pepper and Asafoetida.
  6. Mix them altogether with a spoon till batter looks light & fluffy.
  7. Now heat enough oil to deep fry the vadas.
  8. Take little batter in hand and make a small hole and put into oil.
  9. This way start frying them one by one.
  10. Deep fry vadas untill crisp and light golden brown texture.
  11. Put them in a paper to drain the access oil and then serve with sambar and/or chutney.
