What do you need to make Kakrol Aloo Bhaja
2-3 Teasel gourd
1 big potato
1 small onion finely chopped
1-2 green chili finely chopped
salt to taste
1/2 tsp turmeric powder
1 tbsp mustard oil
Jeera powder (Optional)
You can add some other vegetables as well. I have not add much spices in this recipe, you can add as your own.
How to make Kakrol Aloo Bhaja
Cut the Teasel gourd in stick like shape. You can refer the pictures.
Before cutting them just remove the surface a bit.
Similar to that cut the potatoes as well.
Both will look like in a same shape.
Wash them properly. You can also wash them after removing their surface and then chop them in stick shape.
Now heat oil in a pan and add chopped onions.
Add chopped chilis & turmeric powder as well.
Add salt as per taste.
Mix them for 2-3 minutes.
We will fry them till we observe onions have left its flavour & water.
Now add the chopped vegetables.
Mix them well and cover with a lid.
We need to cook them for 10-15 min in low flame.
In between check & stir occassionally.

After that, remove the cover and check whether they are 3/4th done or not.
If done, then increase the heat and fry them.
Gradually the water or moisture will start removing & they turn into dark color.
Dont stir or cook too much, otherwise everything will mash & mix together.
Stop the flame & serve hot with rice/roti as per your choice.
You can add your spices & other ingredients with this to make this different.
