Today I will share a very simple and common recipe from my kitchen. Sometimes these simple recipes turn into a treat if you involve your passion into that. I believe, any dish can be serve completely different with your special touch & love towards cooking.

Lets see how I make a simple Aloo Gobi recipe for my family….with a difference.

What do you need to make Aloo Gobi Curry

1 medium cauliflower (cut them in small equal cubes)
1 big potato cut into stick size
1 big onion finely chopped
Chopped coriander leaves
2 green chilies finely chopped
1 tsp ginger paste
1 bay leaf
1/2 tsp Red chili powder
1/4 tsp Turmeric powder
1/2 tsp Jeera powder
1/2 tsp Dhania powder
2 tbsp mustard Oil
1 tsp paanch foron
Salt to taste
Little sugar

How to make Aloo Gobi Curry

Wash the cauliflower & potato sticks properly.
Marinate them with salt & turmeric powder.
Now heat oil in a pan and fry the cauliflower & potatoes.
Fry them till their color turns different.
Keep them aside and heat the pan with oil again.

Add bay leaf to the hot mustard oil.
Now add paanch foron to the oil and cover the lid of the pan. As the raw masalas started crackling and they might come out of the pan.
After 1 min of frying the masalas add the chopped onions & green chillis.
Fry them till color turns brown.

Finally add all the masalas (Jeera powder, dhania powder, ginger paste, red chili powder).
mix them all together properly.
Finally add the fried cauliflower & potato sticks and mix with them.
Now its time to add enough water to make a gravy.
If you want to have it with roti/poori them make a thick gravy. I made it a thin gravy dish to have it with rice.

Anyway, after adding water add pinch of sugar. Add salt as well if required.
Cover the lid and cook for 3-4 min. Let them boil altogether.
When everything will mix together an oilly dark look can be seen, where cauliflowers & potato sticks will try to float.
This what exactly I am looking for.

Finally add the chopped coriander leaves and serve hot. Dont cook much afte adding coriander leaves, otehrwise the taste ll loose.

Enjoy this gravy dish with rice/roti whatever you like.
So simple but looks delicious.
